- Hake braised w/spicy tomato-saffron sauce
- Frittata w/stinging nettles, asparagus, and fingerling potatoes
- Spelt pasta w/ ramps, mushrooms and aged goat cheese
- Roasted parsnips w/horseradish-herb butter sprinkled with hemp seeds (adopted from Simply Recipes)
- Bulgur w/ roasted sweet potato bits and grilled haloumi cheese
- Blanched green bean salad w/toasted almonds and pickled red onion
- Raw Tuscan kale salad w/pecorino dressing and roasted spicy chickpeas
- Raw broccoli slaw
- Swiss chard and bitter greens braised with cumin and cilantro
- Asparagus lightly cooked w/cherry tomatoes basil and garlic
